My Wasabi plants are finally mature enough for me to harvest a little. So I am experimenting with a tincture first up, am very excited to see how it turns out!
It’s a gorgeously lush plant as well as being that most pungent and stimulating condiment we know and love from Japanese food.
Wasabi or Japanese horseradish is a plant of the Brassicaceae family, which also includes horseradish and mustard in other genera.
From a medicine perspective it will have many qualities we associate with Horesradish but Wasabi does have a unique aroma and flavour so it will be interesting to see what develops. Once it is done I will start testing it for actions and qualities.
